January 2026 Flavour of the Month: Posh Marshmallow Brownies

January can feel like a long month. The sparkle of Christmas has faded, the evenings are still dark, and comfort suddenly matters more than ever. Which is exactly why our January Flavour of the Month needed to be something properly indulgent.

Meet our Posh Marshmallow Brownies.

These brownies start with our signature rich chocolate base – deeply chocolatey, soft in the middle, and baked to that perfect point where the centre stays gloriously squidgy. But what makes them truly special comes right at the end.

After baking, each brownie is topped with two generous pieces of milk chocolate–covered vanilla marshmallow. They gently settle into the warm surface of the brownie, creating that irresistible contrast between fudgy chocolate and pillowy-soft marshmallow. The result is a brownie that’s rich but not heavy, sweet but not sickly, and completely luxurious in every bite.

The marshmallow pieces themselves are a little bit special too – smooth milk chocolate on the outside, with a soft, vanilla-centred middle that melts beautifully against the brownie beneath. It’s a combination that feels nostalgic and grown-up all at once. Think campfire treats, but polished up for a January afternoon with a cup of tea (or a sneaky late-night treat).
